SWEET SKEWERS

Ingredients

2 lb                            NatureSweet Cherry Tomatoes

1 lb                            Halloumi Cheese (cubed)

1 ea                            Zucchini Squash (thick coin sliced)

1 clove                            Garlic (crushed)

1 ea                            Shallot (fine dice)

1 TBS                            Fresh Basil (fine chopped)

1 TBS                            Fresh Thyme (fine chopped)

3 TBS                            Olive Oil

3 TBS                            Butter (melted)

1 TBS                            Fresh Lemon Juice

to taste              Salt and Pepper

Instructions

  • In a bowl, mix Garlic, Shallot, fresh herbs, Olive Oil, butter and Lemon Juice.
  • On skewers, alternate Cherry Tomato, Cheese, Squash (put squash on lengthwise)
  • Brush marinade onto skewers and place on the grill.  Turn about 3 –4 minutes or when grill marks appear.  If you have left over marinade, brush onto the other side.
  • Can be served hot or cold.

 

SWEET SHERRY CHERRY PASTA

Ingredients

2 lb                            NatureSweet Tomatoes (halved)

2 TBS                            Olive Oil

3 clove                            Garlic (fine chopped)

1 ea                            Red Onion (fine chopped)

2 TBS                            Sherry Vinegar (or dry Sherry Wine)

1 tsp                            Sugar

1 TBS                            Fresh Basil (fine chopped)

½ tsp                            Crushed Red Pepper Flakes

to taste              Salt and Pepper

1 lb                            Your Favorite Pasta (cooked)

Instructions

  • In a bowl, mix Olive Oil, Garlic, Red Onion, Sherry, Sugar, Pepper Flakes and Salt.
  • Add the Cherry Tomatoes and mix to coat.
  • Pour into a large baking dish so that Cherry Tomatoes are only about 1 layer.
  • Roast in a pre-heated oven at 375 degrees about 20 – 25 minutes.
  • When finished, toss in your Pasta.  Add some freshly grated Parmesan Cheese on top and serve.

NOTE:  You can add Kalamata Olives and Marinated Artichoke Hearts to this.  You also could add some sliced Zucchini or Yellow Squash, and some left over Chicken)

 

THE NEW CLASSIC SWEETER BLT

Ingredients

1 lb                            NatureSweet Tomatoes (chopped)

8 slices                            Bacon (cooked and chopped)

½ cup                            Mayonnaise

1 TBS                            Fresh Lemon Juice

1/2 pkg              Mache

to taste                            Salt and Pepper

Instructions

  • In a large bowl, whisk Mayonnaise and Lemon Juice until well blended.
  • Add Tomatoes, Bacon and Mache.  Salt and Pepper to taste.
  • Spread on your favorite bread for a cool and sweeter BLT.

NOTE:  “Where’s the lettuce in this BLT?” you may ask.  We kicked the “L” out of it and added Mache.

 

 

 

NATURE’S SWEET MOZZARELLA SALAD

Ingredients

2 lb                            NatureSweet Cherry Tomatoes

2 lb                            Mozzerella Balls (fresh)

1 bunch              Fresh Basil (fine shredded)

6 oz                            Balsamic Vinaigrette (See Below)

Instructions

  • Mix Tomatoes and Mozzarella and Tomatoes with Vinaigrette.
  • Top with Fresh Basil and serve.

 

Balsamic Vinaigrette

3 parts Olive Oil to 1 part Balsamic Vinegar, chopped Garlic and Shallots.  If you want less fat and bit more tangy, then do equal parts Olive Oil to Balsamic Vinegar.

 

SEXY STUFFED SWEET TOMATOES

Ingredients

2 lb                            NatureSweet Cherry Tomatoes

1/2 cup              Spanish Olives

2 tsp                            Capers (drained)

1/4  tsp              Lemon Zest (fresh)

2 TBS                            Olive Oil

1/4 cup              Feta Cheese

as needed              Spring Mix

Instructions

  • Place the Olives into a small food processor and pulse until chopped fine. 
  • Add Capers, Lemon Zest, Olive Oil and pulse until all minced.
  • Add Feta Cheese and pulse until minced.
  • With a sharp knife, slice the stem end off each Tomato and discard.  Using a 1/4 tsp, remove the juice and seeds, leaving the outside shell.
  • Spoon or pipe the Olive mixture into each shell.
  • Serve on a bed of chilled Spring Mix.

NOTE:  You can throw the stuffed tomatoes under the broiler for a couple of moments to melt the cheese before serving on the Spring Mix.

 

SWEET ON ROMAINE SPEARS

Ingredients

1 head                            Romaine Heart (quartered lengthwise)

1 lb                            NatureSweet Cherry Tomatoes (halved)

Instructions

  • Place two Romaine quarters on each plate.
  • Sprinkle half of the Cherry Tomatoes on top of each.
  • Drizzle with Vinaigrette (See Below)
  • Add some shaved Parmesan Cheese and freshly grated Pepper on top.

 

Vinaigrette:

2 TBS                            Olive Oil

3 TBS                            Red Wine Vinegar

1/4 tsp              Garlic Powder

1/4 tsp              Pepper

1/4 tsp               Salt

In a jar, shake together well.
