Arugula: Fit for A Queen

Hey, Queen Elizabeth the II celebrated another birthday recently.  She turned 84.  In her last visit to the United States, several years ago, the White House chef created a salad just for the Queen.  The main ingredient happened to be the Queen's favorite salad green.  It's called Arugula.  In Englland, it’s also known as rocket lettuce, mainly because it does have a very pleasant, but very strong power to it.  In Europe it’s very, very popular.  One of the things I love to do with rocket lettuce is to mix it with spinach.  See spinach is a sweet green.  Arugula is a bitter green, part of the chicory family, so you mix these two together and you put a nice sweet dressing with it like a poppy seed dressing or raspberry vinaigrette.  Another thing you can do with beautiful baby arugula…put it in a sauté pan for about 15 seconds...a little Olive Oil, salt and pepper.  Wilt it just a bit and then put it underneath a sizzling steak.  Arugula...if it's good enough for the Queen of England, why don't you at least give it a try?
