Fresh Herbs provide the “wow” in any great meal you enjoy at any great restaurant. Chefs know many culinary secrets. But this one thing they are fanatical about: if you want flavor, don’t add salt. Add fresh Herbs. Take a whiff of that pizza. It’s Basil and Oregano that tempt your taste buds. The memorable aroma of Thanksgiving turkey…comes from Sage. The fragrance of Rosemary elevates plain Potatoes into Yukon Gold paradise. The scent of Mint turns Lamb into heaven. The secret is out of the garden. To create like a Chef, use Fresh Herbs. An ordinary supper becomes a masterpiece. First of all, there is a difference between spices and Herbs. Spices generally come from roots and bark, seeds and buds. Fresh Herbs are the leafy green part of plants. Cilantro would be the Herb. Allow the Cilantro plant to go to seed, and you now have a spice called Coriander seeds. This time of year, fresh Herbs are at their very peak of oil content in the leaves. And that means more flavor. When you are storing your fresh Herbs, if they are in a plastic container, just leave them in the container. If you are buying fresh bunches, when you get those home, cut off the very bottom of the stems, as you would a bouquet of fresh flowers. Refrigerate those in a mug about a quarter filled with water. Now, experiment, and start creating your own masterpieces for supper.
