Gooseberries

SPICED GOOSEBERRIES

Ingredients

2 qts Gooseberries

4 ½ cup Brown Sugar

1 cup Cider Vinegar

1 ea Cinnamon Stick

8 ea Whole Cloves

¼ tsp Ground Nutmeg

2 ea Whole Allspice

Instructions

--Remove stems and blossom ends from the berries. Rinse.

--Place sugar, vinegar and spices together in a large pan with ½ cup water.
Bring to a boil. Boil for 5 minutes.

--Add Gooseberries and simmer for 30 – 40 minutes.

--When the Gooseberries are tender, and the syrup thick, pour into sterile jars
and seal.

--This would be great served with fish or poultry.

GOOSEBERRY PIE

Ingredients

Pastry for 2 crust (top and bottom) 9” pie

3 cup Gooseberries

2 cup Sugar

2 cup Quick-cooking Tapioca

1 tsp Cinnamon

2 TBS Butter or Margarine

Instructions

· Preheat oven to 400 degrees.

· Remove stems and blossom ends of Gooseberries, then rinse.

· Crush ½ cup Berries.

· Combine sugar, Tapioca, butter and cinnamon with crushed berries. Cook
in pan over medium-high heat, and stir until mixture boils; then cook for 2 minutes.

· Remove from heat and add remaining whole berries.

· Pour into pastry. Adjust the top. Flute edges and cut vents.

· Brush top with milk and sugar.

· Bake for 35 minutes or until golden brown.
