Berry Recipes
OLD-FASHIONED BLACKBERRY COBBLER
Ingredients
6 cup Blackberries
1 ½ cup Brown Sugar
1 ½ cup Old-Fashioned Oats (not instant)
1 cup Flour
½ cup Parmesan Cheese (freshly grated)
1 tsp Salt
6 oz Butter (chilled and cut into ¼” pieces)
Instructions
- Place fruit in bottom of lightly buttered 9x12” baking dish.
- In separate bowl, mix sugar, oats, flour, cheese and salt.
- With a hand mixer, or your finger tips, quickly mix butter pieces into sugar mixture to form a coarse meal. Mixture should be loose and crumbly.
- Gently sprinkle topping mixture over the fruit.
- Bake in a pre-heated oven, 375 degrees for about 35 minutes or until top is lightly browned and fruit is bubbling.
- Serve warm over vanilla ice cream. Invite Your Produce Man over for some!
BLACKBERRY REFRESHER
Ingredients
½ cup Sugar
½ cup Water
7 cup Fresh Blackberries
2 cup Orange Juice
½ cup Lemon Juice
1 ½ cup Cold Water
Instructions
- Wash Blackberries just before you use them.
- Combine sugar and ½ cup water in a small saucepan. Cook over a medium heat until sugar dissolves, stirring constantly. Remove from heat and chill.
- Mash berries. As an option, you can also press them through a strainer to remove seeds.
- Combine berries with orange juice, lemon juice. Add the sugar syrup. Chill until very cold.
- Just before you serve this, add 1 ½ cup of cold water.
- You could throw it in a blender with some ice cubes if you want.
TANGY BLACKBERRY CHUTNEY
Ingredients
1 ea Onion (chopped)
1 TBS Garlic (minced)
3 TBS Olive Oil
½ - ¾ cup Light Brown Sugar
¼ cup White Wine Vinegar
1 ½ tsp Salt
1 tsp Ground Cumin
½ tsp Ground Cinnamon
½ tsp Nutmet (preferably freshly grated)
¼ tsp Cayenne Pepper
4 cups Peaches (sliced)
1 cup Blackberries
½ cup Walnut halves and pieces
Instructions
- In a large frying pan, saute onion and garlic in olive oil over low heat.
- Stir in brown sugar, vinegar, salt, cumin, cinnamon, nutmeg and cayenne pepper, blending well.
- Add peaches, blackberries and nuts.
- Continue cooking over low heat for 12 – 15 minutes, until fruit is lightly cooked.
- Let cool.
- For best taste, cover and refrigerate overnight before serving.
