Mardi Gras Recipes
SAUTEED FRESH MUSHROOMS
Ingredients
1/2 cup Butter
1 cup Onions (minced)
1 lb Mushrooms (sliced)
1/2 cup Parsley (chopped)
1 tsp Salt
1/4 tsp Pepper
Instructions
In a large skillet, melt butter, add onions, and saute for 2 minutes
or until onions are clear.
Add mushrooms and saute for 5 - 7 more minutes.
Stir in parsley, salt and pepper.
Serve hot with thinly-sliced toasted French bread.
MERLE'S SPINACH BALLS
Ingredients
2 lb Spinach
2 cups Herb-flavored stuffing mix
1 ea Onion (finely chopped)
6 ea Eggs (well-beaten)
3/4 cup Butter (melted)
1/2 cup Grated Parmesan cheese
3/4 TBS Cayenne pepper to taste
1 1/2 tsp Garlic salt
1-2 tsp Creole or Cajun Seasoning
Instructions
Preheat oven to 325 degrees F. Lightly grease a cookie sheet.
Cook spinach and drain well, squeezing to remove excess moisture.
Combine with stuffing mix, chopped onion, eggs, butter, cheese, Cayenne
and garlic salt. Mix well.
Shape into 3/4-inch balls and place on cookie sheet. Bake 15-20 minutes.
NOTE: These are successfully frozen by placing on a pan in freezer until
hard, then storing in airtight bags. To serve, thaw slightly and bake
20-25 minutes.
SPICY SEAFOOD-STUFFED BELL PEPPER
Ingredients
12 ea Red and Green Bell peppers
2 ribs Celery (chopped)
2 ea Onions (chopped)
1 bunch Green onions (chopped)
3 cloves Garlic
1/4 cup Cooking oil
1/4 cup Butter
3 lb White crab meat
3 lb Peeled shrimp (boiled)
1 bunch Parsley (chopped)
1 pkg Mozzarella (8-ounce)
1 cup Parmesan cheese (grated)
to taste Salt, pepper and Tabasco
10 slices Bread (soaked in water and squeezed dry)
As needed Buttered bread crumbs
As needed Olive oil
Instructions
Cut Peppers in half lengthwise and clean. Put bell pepper halves in
boiling water and boil for 5 minutes, rinse in cold water.
Preheat oven to 350 degrees F.
Sauté celery, onions, green onions and garlic in cooking oil
until tender. Remove cloves of garlic. Add butter, crab meat and shrimp.
When heated through, add chopped parsley, then Mozzarella cheese, Parmesan
cheese, salt, pepper and Tabasco, stirring until cheese is melted. Add
bread and mix well.
Stuff pepper halves and top with buttered bread crumbs and place in
large casserole dishes.
Pour a small amount of water and olive oil around peppers and bake for
1 hour.
MAMA'S CANDIED YAMS AND APPLES
Ingredients
8 ea Yams (medium-sized)
2 lb Apples (sliced)
4 TBS Butter
3/4 cup Light brown sugar
to taste Cinnamon
1-2 cups Miniature marshmallows
Instructions
Preheat oven to 350 degrees F. Wash and boil yams in skins until tender.
Cool, peel and slice lengthwise.
In a 2-quart casserole, arrange half the yams; spread with 1/4 cup sugar,
cinnamon, and half the butter. Add apples, arranging as a layer. Repeat
sugar, cinnamon and butter layer. Top with remaining half of yams, 1/4
cup of sugar, and cinnamon sprinkled over all.
Bake 1 hour. Arrange marshmallows on top and place under broiler until
golden, about 5 minutes.
